Cauliflower mac-n-cheese
You won't even miss the pasta once you try this dish 😋
I have been tweeking this recipe for the last couple of years and I think I finally got it!
Here are the ingredients for you to make your own version...
- cauliflower florets
- extra virgin olive oil
- salt and pepper
- non stick cooking spray
- heavy cream 2 cups
- butter 1/2 stick
- onion (diced)
- garlic 3 cloves
- nutmeg 1/2 tsp
- cheddar cheese 1 cup
- parmesan cheese 1 cup
- gruyere cheese 1 cup
- blue cheese 1/2 cup
- parsley
1) Preheat oven to 350 degrees. Line a large sheet pan with aluminum foil and spray it with non stick cooking spray. Spread out your cauliflower on the pan and drizzle with olive oil. Season with salt and pepper and roast in oven for 20 min.
2) While your cauliflower is roasting, melt a half stick of butter in a pot on medium high heat, on the stove. Once the butter is melted, add in your onions and garlic and season with salt and pepper. Once the onions have softened, pour in the heavy cream and add in your nutmeg. Once the heavy cream begins to simmer put the heat on low and add in half of your parnesan cheese, all the blue cheese, half the cheddar and half the gruyere. Stir continuously until all the cheese is melted, then take off heat
3) Take your cauliflower and place in a large glass baking dish and pour cheese sauce over them. Then add the rest of your cheese to the top of the cauliflower and broil in the oven just until the cheese is nice and golden. Top with some fresh parsley!
